				<description>&lt;p&gt;We WERE doing well...then life happened and we worked late, starving when we got home so we ordered a pizza! Ouch! Actually, the spaghetti squash with sauteed veggies the following night was very tasty. If you think about it, pasta really doesn't have much taste by itself; its amazing with a pat of butter, or a variety of sauces...it is even better raw than cooked! Spaghetti squash doesn't have much taste by itself either but with sauteed vegetables in a little olive oil and garlic, it was tasty and healthy.&amp;#160;I'm convinced small gains are best, and not to expect too much too soon. This morning we had brunch at a local restaurant and ordered omelets with vegetables instead of meat. Breakfast is the most important AND delicious meal of the day for me!&amp;#160;It is all about choices...&lt;/p&gt;</description>

				<title>Italian Chicken-Artichoke Soup</title>

				<description>Day 2...we're doing well. I was up at 5 this morning and walked on the treadmill for 20 minutes - not sure if the woman in the apartment above us thought it was such a great idea. It would be an easy out to stop the early morning treadmill, but that only means I will have to do it when I get home from work and do a pilates cd in the morning...I take 500+/- steps to and from my vehicle parked in the mill parking lot, had to go to the morning meeting so I took the 67 stairs in my steel-toed boots, then at noon I had to go to the post office so another 500+/- steps to and from the vehicle. We got home from work around 4 p.m., by 4:45, I was done dinner and plate in the sink! Together we made a lovely Italian Chicken and Ar-Ti-Choke soup. Start to finish it was less than 30 mintues to prepare and cook. Helps that I baked a chicken yesterday and used that instead of cooking more chicken! And, 322 calories later, feeling full. It is a little 'dangerous' to eat before 5:00 p.m. because by 8-8:30, it is snack time - and we all know eating after 8 is not a good idea. Maybe I should go to bed by 7:55 to avoid eating again!</description>

				<title>Talk the Walk</title>

				<description>It's Super Bowl weekend and while I am deciding on what to cook for the event on Sunday, I realized that I am not 'talking the talk or walking the walk'. The premise behind PaMDiF is diabetes education; which includes knowing your sugar score, eating right and exercising more. I love to cook and bake sweets.  

I know my score; it is below the diabetic range but my husband, Tom, has Type 2 diabetes and takes medication to keep it under control. I don't think my cooking has helped...so, I'm turning over a new leaf. I dug out the diabetic cookbooks once again and shopped for fruits and vegetables to make healthy recipes this week.

If I don't share my successes, it will be for not. Therefore, somewhat like Julie from the movie Julie &amp; Julia, I will share my diabetic recipes in a blog but unlike Julie, it won't be 524 elegant recipes but simply taking one week at a time, preparing a meal in under 30 minutes after a long day at work. The goal: cooking healthy meals to lose weight, feel better and help Tom get off his diabetic medications! We can do it!

And, I know, Julie could not possibly prepare Mousse de Foies de Volaille in that tiny apartment kitchen! Mine is twice the size of hers and I only have room for two pans at a time on the counter! 

I know you are sitting at the edge of your seats wondering what DID I prepare for Super Bowl Sunday...well; we had a healthy breakfast of scrambled egg with spinach, grape tomatoes and diced ham, and whole wheat English muffin. About 2:00, we were ready for the Super Bowl snacks. I cooked turkey kielbasa in cranberry sauce and Dijon mustard, and then saut?ed onions, peppers and top round steaks. To stay in super Bowl tradition, I made a plate of nachos - I know - doesn't follow a diabetic diet but we are easing into it slowly! 

At game time, I served sugar-free/fat-free chocolate pudding with fat-free Cool Whip...yummy!
